Whole Foods Super Food Salad

During the COVID-19 pandemic I've been increasing my intake of raw foods that will support my immune system. And one of the only places I can get foods that I trust is Whole Foods. The Super Food Salad was in the deli. I bought this by the weight. This type of food is really cheap since it weighs almost nothing. This salad contained all kinds of healthy immunity building ingredients including blueberries, kale, carrots, goji berries, cashews, and more.

No Evil Comrade Cluck

Here's a No Evil product that I just recently tried. I've tried most of their products. I'm not much into fake meats, so I never really had the desire to try this. I just bought it for the experience of trying something new. I'm glad I did. This was good!

As a long term vegan, I really wasn't sure how to use this product. I cooked it as directed on the box. It had a comforting meaty aroma that reminded me of childhood family gatherings. The texture looked much like the mock duck I occasionally get from the Asian market. While it cooked in the skillet, the smaller pieces got brown and crisp. Larger pieces remained softer and fibrous, much like real bird flesh.

I tried this by itself and also on bread with Vegenaise. It was really good. It's not a product I would use very often, but I did like it. This seems to be a good product to use as a base for homemade vegan chicken salad. Also I can imagine this mixed with stir fried veggies and soy sauce. The taste and texture was almost like chicken, so anyone who likes dead bird flesh will like this. While I may not buy this regularly I would suggest trying it, especially to new struggling vegans or any vegan who once enjoyed chicken.

En-chill-adas From Hippea Camper In Huntsville AL

This was my first time trying the En-chill-adas. Because of the COVID-19 pandemic, it was served in a closed take-out container. I had no idea what this would look like when I ordered it. I assumed it was another bowl, because Hippea Camper does several bowl dishes. I opened this up and smiled with amazement. This was visually beautiful. I began to eat. The flavors were equally as satisfying. The En-chill-ads is another winner from Hippea Camper!

The menu says this is made with basmati rice, beans, adobo sauce, avocado, sour cream, cheese, tortillas, and salsa. I think maybe they also put a little bit of heaven in there. This tasted like real food. Remember this is all plant-based too.

This was almost the real thing. It was served with flour tortillas instead of corn tortillas. But the other ingredients tasted authentic enough to help me forget about the missing corn. Corn is almost always GMO in 2020 anyway, so this is even better. I will definitely be ordering this again. With plant-based food this good, there's no need for meat!

Onion Bagel with Hummus, Tomato, and Lettuce at Bruegger's Bagels

This is one of my favorite breakfast foods. This time they gave me some really limp lettuce. I picked off the bad part. The remainder of the meal was excellent!

Vegan Ultra Green Spanakopita At Whole Foods

This interesting food was at the deli counter at Whole Foods. This vegan version of a Greek pastry was creamy, tangy, stringy, and soft. I will buy this again. It was excellent!

This gourmet mushroom blend is very good. This is what I've been using for most of my mushroom dishes lately.

St. Patrick's Day Vegan Dinner 2020, Vegan Shepherd's Pie

I celebrated St. Patrick's Day with a home-made vegan shepherd's pie. I can't share the recipe with you because this blog isn't a recipe blog and I didn't document how I made it. I will tell you that the ingredients included potatoes, lentils, mushrooms, onions, Adobo seasoning, Marmite, peanut butter, water, black pepper, and salt. That's a weird set of ingredients, but it worked. This was amazing!

Red Lentil And Spinach Soup At Whole Foods

This is one of the vegan soups at Whole Foods. This one is a good choice. You can't see the soft chunks of veggies because they settled to the bottom.

I had this for lunch today and it was so good I went back this afternoon to get a large take-out bowl for dinner. The spices give the soup a flavor that you could imagine experiencing in a nice Indian restaurant. This is real comfort food. This soup was excellent!

Croissants With Blueberry Preserves

I found some croissants in a can that appear to be vegan. And I bought a jar of blueberry preserves as a filling. There were many ingredients in the croissants that great-grandma wouldn't recognize, so I'm not going to claim this is a health way to eat. It did taste very good, and it was easy to make.

A Vegan Southern Plate With Great Northern Beans

These Great Northern beans crossed the Mason-Dixon line. Look what happened to them.

Great Northern Beans
These tasty beans got seasoned with chili powder, dried chili pepper flakes, and diced onion.

Fried Potato Wedges
I quartered a potato, seasoned it with olive oil, Adobo, and paprika, then cooked it in the air fryer.

Fried Okra
I fried some okra in olive oil. It was first coated with organic corn meal and wheat flour.

Home-made Cornbread
I baked this in a skillet. It's made with organic corn meal, wheat flour, salt, onion, Adobo, black pepper, vegan egg replacement, baking soda, olive oil, a pinch of sugar, and water.

Pieology Vegan Sausage Pizza

Another great plant-based lunch at Pieology. This one has the vegan cheese and vegan sausage on it! Vegans, always go for the gluten -free crust. The others are not vegan.

Home-made Falafel, Humus, and Rice

This meal was surprisingly better than expected. This must be the best falafel mix I've tried. The hummus mix was excellent.

To make this awesome meal I used the following products along with white rice, a can of garbanzo beans, and a few spices.

The Be Hive Plant Based Roast Beef

I found The Be Hive in Nashville. It's a vegan deli on the east side near Five Points. They have a variety of items for sale to take home, and they also have a deli menu for eating there. This was my first time at The Be Hive. Here's what I bought.

I anticipated eating a good meal in the deli. Upon arrival I discovered that was not such a good idea. It was a difficult place to find because it's so small and hidden between a freak shop and a music and comedy venue. There's not much of a sign to mark the location. There was hardly a spot to park a car. The deli is tiny and looks more like a utility room or the break room of a small manufacturing facility. It was not very inviting as a place to sit and eat. I felt like I had sneaked into the back door of a night club or something. For such a small place, it was surprisingly crowded and busy. Eating at the table would have been uncomfortable with all the people lined up inside. I apparently discovered a Nashville secret.

The plant-based roast beef I bought was excellent. I put it on some Dave's Killer Bread with mustard and Vegenaise. I should have purchased more of this. Look at this moist beefy texture!

Based on this experience, I will do my best to return to The Be Hive soon to try some of the other grab and go treasures.
