Welcome to Monk Island, a food blog with a new perspective. This blog documents my experiences as a roaming vegan with limited time, money, and resources. I search the land for simple, plant-based meals for one person, and I share those here with you. This blog is for herbivores on the go who don't live in the kitchen, don't have a kitchen, or don't have a home. No politics or extremist rants. Just peace, respect, and veggies.

Whole Foods Super Food Salad
No Evil Comrade Cluck
As a long term vegan, I really wasn't sure how to use this product. I cooked it as directed on the box. It had a comforting meaty aroma that reminded me of childhood family gatherings. The texture looked much like the mock duck I occasionally get from the Asian market. While it cooked in the skillet, the smaller pieces got brown and crisp. Larger pieces remained softer and fibrous, much like real bird flesh.
I tried this by itself and also on bread with Vegenaise. It was really good. It's not a product I would use very often, but I did like it. This seems to be a good product to use as a base for homemade vegan chicken salad. Also I can imagine this mixed with stir fried veggies and soy sauce. The taste and texture was almost like chicken, so anyone who likes dead bird flesh will like this. While I may not buy this regularly I would suggest trying it, especially to new struggling vegans or any vegan who once enjoyed chicken.
En-chill-adas From Hippea Camper In Huntsville AL
En-chill-adas from Hippea Camper in Huntsville AL |
The menu says this is made with basmati rice, beans, adobo sauce, avocado, sour cream, cheese, tortillas, and salsa. I think maybe they also put a little bit of heaven in there. This tasted like real food. Remember this is all plant-based too.
This was almost the real thing. It was served with flour tortillas instead of corn tortillas. But the other ingredients tasted authentic enough to help me forget about the missing corn. Corn is almost always GMO in 2020 anyway, so this is even better. I will definitely be ordering this again. With plant-based food this good, there's no need for meat!

St. Patrick's Day Vegan Dinner 2020, Vegan Shepherd's Pie
I celebrated St. Patrick's Day with a home-made vegan shepherd's pie. I can't share the recipe with you because this blog isn't a recipe blog and I didn't document how I made it. I will tell you that the ingredients included potatoes, lentils, mushrooms, onions, Adobo seasoning, Marmite, peanut butter, water, black pepper, and salt. That's a weird set of ingredients, but it worked. This was amazing!

Red Lentil And Spinach Soup At Whole Foods
I had this for lunch today and it was so good I went back this afternoon to get a large take-out bowl for dinner. The spices give the soup a flavor that you could imagine experiencing in a nice Indian restaurant. This is real comfort food. This soup was excellent!

The Be Hive Plant Based Roast Beef
I anticipated eating a good meal in the deli. Upon arrival I discovered that was not such a good idea. It was a difficult place to find because it's so small and hidden between a freak shop and a music and comedy venue. There's not much of a sign to mark the location. There was hardly a spot to park a car. The deli is tiny and looks more like a utility room or the break room of a small manufacturing facility. It was not very inviting as a place to sit and eat. I felt like I had sneaked into the back door of a night club or something. For such a small place, it was surprisingly crowded and busy. Eating at the table would have been uncomfortable with all the people lined up inside. I apparently discovered a Nashville secret.
The plant-based roast beef I bought was excellent. I put it on some Dave's Killer Bread with mustard and Vegenaise. I should have purchased more of this. Look at this moist beefy texture!
Based on this experience, I will do my best to return to The Be Hive soon to try some of the other grab and go treasures.
