Vegan Halloween Dinner: Skulls In The Dirt

To celebrate Halloween I made skulls in the dirt for dinner.

I carefully carved potato halves into skulls, coated them with oil, rubbed them with paprika to enhance the shapes, and baked them until fully cooked. Meanwhile, I made caramelized onion and bell pepper with soy sauce and crushed black pepper as a foundation for this creepy meal. I also added the potato shavings in there because I didn't want to waste anything. This tasted great, and it was perfectly cooked!

Home-made Hippie Nachos

I really had a craving for a meal I usually get at Blackstone Pub & Eatery in Gadsden AL. I couldn't drive there for a meal so I went to the grocery store and bought the ingredients. This is a home-made version of the Hippie Nachos at Blackstone Pub & Eatery minus cheese and sour cream. This was as not exactly the same, but it was really good.

This includes corn tortilla chips, black beans, mushrooms, fresh cilantro, lettuce, tomatoes, jalapenos, black olives, a single peperoncino pepper, and salsa (not shown)

Brad's Original Cruchy Kale

I already tried some of Brad's flavored kale products. I though I should try the original flavor. It's just as good as the others!

Fresh Gourmet Crispy Red Peppers

If you like salad, you will love salad with this on top. These crispy red peppers will give your salad a good crunch and additional flavor. I'm not a huge fan of salad (many vegans are not), so I like to add this kind of product to make it taste more like real food.

I found this vegan salad at Sprouts Farmers Market. This came with sesame dressing. It was perfect in every way! Every ingredient was fresh and delicious.The quinoa made this better than expected.

Gardein Skillet Meals, Chick'n Florentino

This is my first impression of a Gardein skillet meal, more specifically, Chick'n Florentino.

I had no idea what to expect with this meal. I was unfamiliar with this kind of food because I'm an herbivore and I grew up too poor for fancy looking food like this. Let's get to the good part.

This skillet meal serves two and takes about 10 minutes to prepare. A skillet with a fitted lid and a small amount of oil was needed. All I had available at the time was a deep pot with a lid, but that worked well for me. The sauce comes frozen in a pouch and must be warmed in a bowl of hot water for a few minutes. My sauce pouch began to leak into the water. Fortunately it was almost thawed when the leak was apparent, and the leak was tiny. Other than that, preparation was easy. The aroma made my immediate surroundings smell like a nice restaurant.

As this meal was cooking, I was concerned with the sauce. It appeared to be a bit thin. However, once I removed it from the heat the sauce became nice and creamy. The sauce was great! This had plenty of broccoli in it, which is excellent for me. I love broccoli. The broccoli pieces were a bit large, but that's not a big deal. The noodles were perfectly cooked. The chick'n had an addictive, mild flavor with a meaty texture. I personally liked the chick'n, but it wouldn't fool meat eaters. Some people would prefer a more authentic dead bird flavor. I prefer to know my food is not dead flesh, so this was perfect for me.

This product is a great choice for single people and anyone who wants an easy meal. It was very easy for such a good tasting meal. The price was a bit high, but the flavor is better than other frozen vegan options, and this is cheaper than restaurant food. I'll buy this again. This product is another winner from Gardein!

A Vegan Lunch At Jimmy John's In Cullman AL

Cullman AL doesn't have many vegan options, just the limited fast food choices. I found this Jimmy John's near downtown a while back. I went in and bought a bag of chips and a drink just to scope the place out. After doing some research, I made a return visit to try something more.

I found one sandwich on the menu that looked like it could be made vegan. This is a #6 The Veggie minus provolone and mayo. I made it a combo with the Original Jimmy Chips and a drink.


My first impression of the sandwich was good. The food was beautifully and carefully prepared. The bread was smooth and firm. I liked the shredded lettuce. The tomatoes and cucumbers were thinly sliced. Everything looked fresh.

The taste of the sandwich was good, however it was not as full as I would prefer. Once I put my hands around the sandwich, the two halves of the bread almost closed together completely. It was an empty sandwich. This was the sandwich omnivores think vegans eat. It was as if I ordered a meat sandwich with a few veggies on top, but said "oh, just hold the meat". But what I did have was pretty good for what it was. Being my first time, I did not know they would be cool with adding additional toppings. Next time I will add more optional veggies like avocado, sprouts, and onion. I could also add two kinds of mustard.

The sweet tea was great. I knew from my first visit about the Jimmy Chips, They were excellent.

This Jimmy John's was clean and quiet at the time of this visit. The service was very friendly. My only concern as a vegan is with the possible cross-contamination during slicing. They could be using a shared slicer. Another thing to think about with Jimmy John's is the reports of animal cruelty by the chain's owner. That's a another issue though. I try to keep this blog positive and focus on the food. Based on my own personal experience during this visit, I do expect to return to Jimmy John's in the future.

Hilary's Organic World's Best Veggie Burger

I heated a Hilary's veggie burger in my skillet, put it on skillet-toasted Dave's Killer Bread Burger Buns Done Right, and I added spicy brown mustard and Follow Your Heart Vegenaise. I like my veggie burgers slightly crunchy on the outside, so I cooked this patty a bit longer than the recommended time. It was perfect!

Hilary's labels this product as "world's best". I will not argue that claim. This was a really good burger. Good job, Hilary's!

The first time I cooked one of these patties in my skillet I had some trouble with it. The instructions say to heat it with oil on medium heat. My heat must have been too high. That first patty stuck to the skillet and fell into pieces. It tasted great, but it was an ugly mess. I lowered the heat for this second patty and the results were perfect. Next time I'll try to have some hydroponic lettuce and sliced tomato to make it even better.

Home-made Minty Spring Rolls

I used Vietnamese rice paper to wrap alfalfa sprouts, carrots, cabbage, and mint. I went heavy on the mint. I drizzled a little bit of Shoyu sauce over the top. This was an excellent light lunch.

Upton's Naturals Bacon Seitan

This vegan bacon is really good. I was never a huge bacon fan back in my omnivore days, but I did like it on sandwiches because of its crunchy texture and salty taste. Herbivores can have a very similar experience with Upton's Bacon Seitan.


I fried this seitan in a skillet and put it on vegan bread with lettuce, tomato and vegan mayonnaise. This didn't taste exactly like real bacon, but that's okay. This bacon wasn't made with the filthy carcass of a slaughtered animal. This is vegan bacon!

Dollar Store Snack: Peanuts and Coca-Cola

I needed a snack, and the only place around was a Dollar General. They don't have as many good vegan options as I would like, but I did find something good.

They had several types of peanuts. I liked the ingredients on this jar. It said "Peanuts, dry roasted". That's all. No nasty additives or anything. I would have liked some salt though. The Coca-Cola was the most appropriate choice of drink since I am in the deep south. Down here, peanuts and Coca-Cola are known as a perfect pair, similar to RC Cola and Moon Pies. It's too bad Moon Pies aren't vegan. During my omnivorous childhood, I did enjoy a few Moon Pies.

Some people put their peanuts in their Coca-Cola. I tried that and didn't care for it. I'd rather alternate between the two and fully appreciate the flavors individually.
