I just tried Trader Joe's Vegan Enchilada Casserole. This was very good! It was in a family-sized container, so it was too much for one normal meal. This was loaded with veggies. The flavors were a bit on the mild side, so this is a great choice for younger and older vegans. The texture was a bit soft too. I do prefer a crunchy top layer. No big deal though. Overall this was completely satisfying, except for the plastic cooking bowl. This is a good choice for vegan families with limited time. Single eaters, you'll have good leftovers for later. This is now on all of my Trader Joe's shopping lists.
