I sliced and baked some pre-made polenta and dumped left-over marinara sauce on top then sprinkled it with Bragg's Nutritional Yeast. This was very good, but I had trouble getting the polenta to become brown and cripsy on the edges.
Welcome to Monk Island, a food blog with a new perspective. This blog documents my experiences as a roaming vegan with limited time, money, and resources. I search the land for simple, plant-based meals for one person, and I share those here with you. This blog is for herbivores on the go who don't live in the kitchen, don't have a kitchen, or don't have a home. No politics or extremist rants. Just peace, respect, and veggies.

Victoria Vegan Vodka Sauce
Another really good pasta meal! I used 365 Everyday Value pasta shells with Victoria Vegan Vodka Sauce. I topped it with Bragg Nutritional Yeast.
This Victoria Vegan Vodka Sauce was so good! This brand of sauces has left me with no good reason to eat at Italian restaurants (most Italian restaurants don't have vegan food anyway). This really is one of the best pasta sauces I've had. They don't pay me to say it either. I should show some love to the shell pasta and nutritional yeast too. All of these products together make a perfect meal.

Whole Foods Salad
Liquid Aminos tastes similar to soy sauce, but it's not as salty. The smaller bottle has a spray pump top for misting veggies with liquid deliciousness.

Vegan Poverty Noodles
But this vegan version includes organic noodles, Earth Balance butter alternative, and black pepper. I got fancy and sprinkled it with Bragg's Nutritional Yeast. This is still very cheap, easy, and quick.
